Men and postmenopausal women age 50-70 years
|The purpose of this study is to evaluate the health effects of eggs when consumed with other cooked breakfast foods. Participants will be asked to eat three test meals (including pork sausages and hash browns either alone, with eggs, or with an egg-free pudding) and have blood and urine samples collected.|
|Length of Study:||4 to 6 weeks||# of Visits:||1 screening visit, 1 visit to pick up food/diet instructions, 3 study visits|
|Residency:||None||Study diet||For 6 days volunteers will follow a diet low in phytochemicals. Examples of foods that must be restricted include whole grain products, vegetables, fruits, nuts, seeds, beans, legumes, vegetable oils, tea, coffee, cocoa, wine, herbs and spices. Instructions will be provided. Must stop dietary supplements one month before study admission and for duration of the study|
|Payment:||$25 for screening, and up to $385 for participants who qualify and complete the study||Can I work?||Not on study visits 2, 3, and 4|

This does not mean you will be testing the entire time.
The length of time volunteers are required to stay overnight at the HNRCA. Residents have their own private room, bathroom, television, VCR, and phone during their stay.
