Postmenopausal women, ages 50 to 85 years
| This research study will determine how diets containing three different types of fatty acids: stearic (found in cocoa butter, meats), palmitic (found in meats, dairy and some plant oils) and oleic (found in olive and corn oil) affect cardiovascular disease risk factors, with a specific emphasis on inflammation. | |||

| Payment | Potential volunteers will receive $20.00 for completing the screening 1 visit, and $25.00 for completing the screening 2 visit to compensate for travel and parking costs. Additionally, volunteers will receive a total of $1,350 upon completion of the 3 diet phases. If the volunteer does not complete the entire study, the stipend will be prorated at $450 per completed phase. | ||
