1541: Fatty Acid & Inflammation

To determine how diets containing three different types of fatty acids: stearic (found in cocoa butter, meats), palmitic (found in meats, dairy and some plant oils) and oleic (found in olive and corn oil) affect cardiovascular disease risk factors, with a specific emphasis on inflammation.

Target Population
Postmenopausal women, ages 50 to 85 years

Major Exclusions
BMI < 20 and > 35 kg/m2
Alcohol intake greater than 7 drinks per week
Heart Disease
High blood pressure
Taking medication known to affect lipid metabolism, such as statins

Length of Study
15 weeks (excluding 2-4 week washout period in-between each diet phase)


Study diet
All food and beverages will be provided during the 15-week period.

Potential volunteers will receive $20.00 for completing the screening 1 visit, and $25.00 for completing the screening 2 visit to compensate for travel and parking costs. Additionally, volunteers will receive a total of $1,410 upon completion of the 3 diet phases.

Length of study

Total length of the study including resident stays and nonresident visits.
This does not mean you will be testing the entire time.

The length of time volunteers are required to stay overnight at the HNRCA. Residents have their own private room, bathroom, television, VCR, and phone during their stay.

The amount of reimbursement for travel and inconvenience.

Total number of nonresident visits.
